CARROT CAKE OAT BARS

The perfect mid-week pick me up!



INGREDIENTS

MAKES 9 SQUARES

75g oats

60g almonds flakes

65g walnuts, chopped

125g medjool dates, pitted

75g carrots, grated

30g shredded coconut

1 tbsp orange zest, grated

1 tsp cinnamon

1 tsp vanilla extract

1 tsp himalayan salt


METHOD


1. Preheat oven 180ºC. Place the oats, almonds and walnuts and shredded coconut on a lined baking tray and bake until lightly toasted (around 10 minutes) . Set aside and allow to cool.


2. Place the grated carrot, dates, orange zest, cinnamon, vanilla and salt in a blender or food processor and pulse until the mixture is well chopped, Add the oat and nut mixture in and once again blend until the nuts are finely ground.


3. Line a 8 x8 tin with cling film and press the date mixture into the pan evenly. Cover and refrigerate until the mixture is firm (for about 2 hours).


4. Cut into 9 bars and wrap individually in plastic wrap. Store the bars in the refrigerator for up to 2 weeks.
