ONE POT THAI SALMON & SWEET POTATO CURRY
INGREDIENTS
- 4 x 125 g Salmon fillets 
- Banana shallots 2 finely sliced 
- Ginger 15 g grated 
- Green Chillies 2 finely chopped 
- Spinach 200g 
- Vegetable oil 25g 
- Chicken stock 400ml 
- Garlic 2 cloves crushed 
- Coconut milk 400ml 
- Sweet potato 250g diced 
- Coriander chopped 
- Red pepper sliced 1 
- Ground Cumin ¼ TPSN 
- Ground Coriander ¼ TPSN 
- Turmeric ¼ TPSN 
- Lemon grass 1 
METHOD
- Mix together the onion, peppers, chillies, ginger, garlic and spices together. 
- Heat the oil in a pan the add the above and cook for 3 mins. 
- Add the coconut milk and stock cook at a gentle heat for 10 mins 
- Add the diced sweet potato cook for a further 8 – 10 mins 
- The add the diced salmon bring back to a gentle simmer then finish with spinach and chopped coriander 
- Serve with noodles or rice.
