ONE POT THAI SALMON & SWEET POTATO CURRY
INGREDIENTS
4 x 125 g Salmon fillets
Banana shallots 2 finely sliced
Ginger 15 g grated
Green Chillies 2 finely chopped
Spinach 200g
Vegetable oil 25g
Chicken stock 400ml
Garlic 2 cloves crushed
Coconut milk 400ml
Sweet potato 250g diced
Coriander chopped
Red pepper sliced 1
Ground Cumin ¼ TPSN
Ground Coriander ¼ TPSN
Turmeric ¼ TPSN
Lemon grass 1
METHOD
Mix together the onion, peppers, chillies, ginger, garlic and spices together.
Heat the oil in a pan the add the above and cook for 3 mins.
Add the coconut milk and stock cook at a gentle heat for 10 mins
Add the diced sweet potato cook for a further 8 – 10 mins
The add the diced salmon bring back to a gentle simmer then finish with spinach and chopped coriander
Serve with noodles or rice.
