THAI SALMON & SWEET POTATO CURRY

ONE POT THAI SALMON & SWEET POTATO CURRY


INGREDIENTS

  • 4 x 125 g Salmon fillets

  • Banana shallots 2 finely sliced

  • Ginger 15 g grated

  • Green Chillies  2 finely chopped

  • Spinach 200g

  • Vegetable oil 25g

  • Chicken stock 400ml

  • Garlic 2 cloves crushed

  • Coconut milk  400ml

  • Sweet potato 250g diced

  • Coriander chopped

  • Red pepper sliced  1

  • Ground Cumin   ¼ TPSN

  • Ground Coriander  ¼ TPSN

  • Turmeric  ¼ TPSN

  • Lemon grass 1


METHOD

  1. Mix  together the onion, peppers, chillies, ginger, garlic and spices together.

  2. Heat the oil in a pan the add the above and cook for 3 mins.

  3. Add the coconut milk and stock cook at a gentle heat for 10 mins

  4. Add the diced sweet potato cook for a further 8 – 10 mins

  5. The add the diced salmon bring back to a gentle simmer then finish with spinach and chopped coriander

  6. Serve with noodles or rice.
