FETA STUFFED SQUASH

A hearty vegetarian recipe that brightens up the winter months!

FETA STUFFED BUTTERNUT SQUASH


INGREDIENTS

  • 1 butternut squash

  • 1 courgette

  • 1/2 aubergine

  • 1 red onion

  • 1 pepper

  • 2 cloves garlic

  • 3 tablespoon olive oil

  • 1 tinned tomatoes, 400 ml

  • 1 teaspoon herbs Provence

  • 150 g feta cheese

  • salt and pepper

  • oil for frying

  • Optional: cooked rice, mushrooms, any vegetables you fancy!


METHOD

  1. Cut courgette, aubergine and pepper into even size dice.

  2. Heat a frying pan add vegetable oil the add chopped vegetables and lightly fry.

  3. Add chopped herbs and garlic and finish with chopped tinned tomatoes.  Taste.

  4. Cut the butternut squash in half and remove seeds and season.  Coat in oil and bake in the oven (175oC) till the flesh is soft and remove the flesh using a spoon

  5. Season the inside of the squash

  6. Combine the cooked vegetables and the flesh from the squash

  7. Place the mixture back into the squash skin top with crumbled feta cheese bake at 175oC for 15mis if hot, 25 mins if from cold
