VEGGIE BURRITOS

INGREDIENTS (SERVES 2)

1/2 onion, chopped 1 tbsp olive oil 1 garlic clove, minced 1 tsp chilli powder 1/2 can black beans, rinsed 2 tbsp tomato paste 100g white rice2 wraps 60g mature cheddar cheese 2 tbsp creme fraiche fresh coriander 1 lime, cut in half salt & pepper salsa, to serve


METHOD


1. 1. To begin, cook rice according to instructions. 2. Once the rice has cooked, heat a pan over medium heat. Add the olive oil and cook the onion and garlic for 5 minutes until softened. Add the chilli powder, black beans, rice and tomato paste. Leave to simmer for 10-15 minutes. Add seasoning to taste. 3. Heat the wraps up for roughly 15 seconds in the microwave. Add half the mature cheddar in each wrap as well as the black bean mixture. 4. Top with 1 tbsp of creme fraiche and fresh coriander to each wrap before folding over the ends and rolling up to serve. Secure by wrapping with foil if you want. 5. Serve with a wedge of lime as well as a side of salsa!
