HOMEMADE CREPES WITH BANANAS, HONEY & CARAMELISED APPLES

An easy to follow recipe for crepes that works every time! And who doesn't like the sound of caramelised apples?!


 


HOMEMADE CREPES WITH BANANAS, HONEY & CARAMELISED APPLES

INGREDIENTS (Makes 12 crepes)

For the crepes:

140g plain flour

200ml milk

100ml water

2 eggs

25g butter

For the caramelised apples:

3 Granny Smith apples

1 knob of butter

2 tbsp maple syrup

For the toppings:

Bananas

Runny honey


METHOD

For the crepes:

  1. Mix the water and milk together in a jug.

  2. Sift the flour into a medium bowl before adding and whisking in the eggs. Gradually add the water-milk mix, whisking constantly.

  3. Leave the mixture to rest for around 20 minutes.

  4. Melt the butter and whisk it into the mixture.

  5. Heat a frying pan over a medium heat and lightly grease it with a bit of butter.

  6. Spoon half of a medium sized ladle of batter into the pan, swirling it around to ensure an even layer of batter.

  7. Cook for around 50 seconds before flipping and cooking the other side until it begins to bubble.

  8. Slide the crepe on to a plate and top with your toppings.

For the caramelised apples:

  1. Core and cut your apples into cubes.

  2. Melt the butter in a non-stick frying pan and add the apples. Cook until the apples turn slightly brown.

  3. Add the maple syrup and cook until the apples are golden and sauce is sticky.

  4. Serve with your pancakes.
