A delicious, hearty recipe that is perfect for a gloomy Monday!
INGREDIENTS
SERVES 4
4 chicken fillets, diced
2.5cm fresh ginger, grated
1 tbsp olive oil
90g peanut butter
125ml water
1 tsp chilli powder
2 garlic cloves, minced
1 tbsp honey
750g sweet potato
250g broccoli
1 tin beansprouts
1 medium bell pepper
2 spring onions
1 tbsp sesame / peanut oil
1 tbsp soy sauce
1 tbsp lime juice
1 lime, to garnish
fresh coriander, to serve
handful chopped peanuts
METHOD
1. Firstly cook your diced chicken in a pan with some olive oil until cooked. Set aside.
2. To make your sauce, add the peanut butter, fresh ginger, honey, soy sauce, garlic, water, chilli powder and lime juice to a bowl and mix well.
3. If you have a spiralizer, use this to create your sweet potato noodles! If not, you can still use a peeler to make long strands.
4. In a pan, add some olive oil and place on a medium heat. Add the chopped pepper and broccoli, cook for a few minutes. Then add the beansprouts and sweet potato noodles for an additional 3-4 minutes.
5. Reduce the heat and place your cooked chicken back into the pan and add in your pad thai sauce. Mix everything together.
6. Take off the heat and add a slice of lime, fresh coriander and a handful of peanuts to serve!
